February - A Yummy Super Bowl Snack


February is like a month of celebrations. It starts off with a bang from the Super Bowl on Sunday afternoon so how about a simple, nutritious and tasty snack to munch on? I'm very excited to have my good friend Best-Selling and Award-winning author Mary Morgan as my guest today.

These tasty nuts are great anytime. I usually serve them during the holidays and while watching football games.


Sláinte mhath!



SPICY ROSEMARY ROASTED CASHEWS

2 cups raw unsalted cashews

1 tablespoon chopped fresh rosemary leaves. (In a pinch, I’ve used dried rosemary)

1 teaspoon dark brown sugar

1 teaspoon sea salt (or kosher)

1/4 teaspoon cayenne pepper (or more, depending on your taste)

1/2 tablespoon butter, melted



Preheat oven to 375 degrees F


On a baking sheet, arrange cashews in single layer. Roast 8-10 minutes or until nuts are toasted and heated through.


Meanwhile, in a large bowl, stir together rosemary, brown sugar, salt, and cayenne until combined. Stir in melted butter.


Add hot cashews to bowl with rosemary mixture and toss until nuts are well coated. Serve warm.


(Recipe can be doubled if you’re having more guests)
